It’s rare to find a tavern that serves seasonal dishes, especially bamboo shoots and other natural plants harvested in the woods. Apparently, this harvester goes to great lengths fighting through the underbrush for our benefit. Usually heaven helps those who help themselves, but here, heaven just helps and helps. It looks like Kanazawa will have a bumper crop of bamboo shoots this year.image
As always, the appetizer was delicious.

This is the only time of year you’ll get young bamboo shoots boiled up soft and delicious.

These are limited to the season, too. “Kogomi,” “tara” sprouts, wild “udo,” “koshiabura,” all gathered in the mountains nearby. Try them with green tea salt.
