Akagi, a Japanese-style izakaya, relishes all four seasons, but spring is special because the wild edible plants, bamboo shoots, fresh-water trout and char make you fully appreciate nature.
But now, it seems the wild vegetable season is about to end. Lucky timing got me there today, and I saw something I hadn’t seen all year – “susutake.” City people probably won’t know the name.
There’s no word for it in English or Chinese. The formal scientific name is “sasa kurilensis,” but I don’t think many of our overseas visitors would know that.
